Portobello Mushroom Burger

Grilled Portobello mushroom Cheddar flavoured burger with grilled red onions and Green Goddess dressing.

Ingredients

  • 2 medium-sized Portobello mushrooms
  • ¼ small red onion, thinly sliced
  • Salt and pepper, to taste
  • 2 tbsp Italian dressing
  • 1 tbsp olive oil
  • 2 slices Vitalite Plant-Based Cheddar Flavoured Slices
  • 2 brioche buns
  • Green Goddess Dressing (homemade or store-bought)
  • Sliced tomato and pickles (or other toppings of your choice)

Directions

  1. Remove the stem from each mushroom and lay them cap side down on a lightly oiled baking sheet. Place the onions on top of each mushroom. Season with salt and pepper.
  2. Drizzle the Italian dressing evenly over the mushrooms and onions. Cover with plastic wrap and marinate for an hour at room temperature.
  3. Pre-heat an oven to 204°C (400°F).
  4. Remove food wrap from baking sheet and drizzle olive oil on the mushrooms and red onions and bake for 15-20 minutes, until tender. Note: for a more caramelized charred texture, put the mushrooms under the broiler for a few minutes.
  5. Top the mushrooms and onions with Vitalite Plant-Based Cheddar Flavoured Slices during the last minute of cooking to melt them lightly. Toast the brioche buns during this last minute as well.
  6. Spread a little Green Goddess dressing on the bottom bun. Top with the mushroom, onion and Vitalite Plant-Based Cheddar Flavoured Slice mixture, then tomato and pickle slices. Drizzle more Green Goddess dressing. Put the bun on top and enjoy!
